This is an updated recipe guide from one I did previously and here I share more info and tips to get your Jollof Rice right on your first attempt especially if you are not from West Africa where the dish originates.
I have served it with Roast Chicken which I also demonstrate and I hope you enjoy yours.
Jollof Rice
Ingredients:
2 large onions
2 medium red peppers(for spicy version add chillis)
3 tomatoes
1-2 tbsp tomato paste
Garlic (optional)
250ml water/chicken stock
Suya spice(you can substitute with 1 tsp of ginger, garlic, paprika, cumin each)
3 cups rice
Rosemary-Lemon Roast Chicken
Ingredients:
1 whole chicken
1 large White Onion(sliced)
3-4 cloves garlic
1 Lemon(sliced thin)
For the Marinade:

small bunch rosemary
2 tbs salt
2 Tbsp Black peppercorns
