Soft and Yummy Carrot Cake Muffins

▪ 1 1/2 cups (300g) granulated white sugar
▪ 4 large eggs
▪ 1 cup (240 ml) canola oil (or other flavorless oil)
▪ 2 tsp pure vanilla extract
▪ 2 cups (260 grams) all-purpose flour
▪ 1 tsp baking soda
▪ 1 1/2 tsp baking powder
▪ 1 1/2 tsp ground cinnamon
▪ 1/2 tsp salt
▪ 340g raw carrots finely grated (about 2 1/2 cups)
▪ 1 cup (100g), walnuts or available nuts(Optional)
